I had disabled auto-update checking for iTunes, but it did it anyway:

iTunes alert informing me of the iPhone version 1.1.1 update

To which I replied:

Same panel with Do Not Ask Me Again selected

You can update my iPhone when you start supporting 3rd party apps to overcome some of the glaring omissions in what the iPhone offers.
